Malted Cheesecake

Mayda I told you I would post this here:

Malted Cheesecake: Taken from Redbook Magazine March 2004 (isn't is so much less cooler now?)

Crust:
In bowl mix 1 1/4 cups chocolate cookie crumbs (I use chocolate grahm cracker crumbs) with 2 T. sugar and 3 1/2 T. melted butter. Press onto the bottom of a greased 9 in. springform pan. Bake 10 minutes at 350 F. Cool.

For filling:
1. Beat 3 8 oz packages of softened cream cheese, 1 C sugar, 3/4 cup sour cream, 2 t. vanilla extract. Add 1 cup malted-milk powder.
2. Divide into two bowls and stir 4 oz. melted semisweet chocolate into one of the bowls of batter.
3. Pour half of the vanilla batter into the crust, cover with 1/2 the chocolate batter, repeat with the last of the two types of batter.
4. Swirl with ta thin knife to marble top.

Bake at 350 F for 55-60 minutes, cool, refridgerate and when you're ready to eat unmold the cheesecake and slice. Garnish with chocolate curls if desired. Enjoy!

This is one of many of the variations of this recipe. The article also has a basic cheesecake recipe, a lemon cheesecake recipe and a pumpkin-spice cheesecake recipe, all starting with teh basic recipe. Happy to give out the others if wanted.
